Healthy Pumpkin Breakfast Cookies
Pumpkin oat breakfast cookies with chia seeds, pecans and warm spices.

01Preheat oven to 350 degrees F and prepare a baking sheet with parchment paper or a silicone liner. 2. In a bowl whisk together pumpkin, coconut oil, maple syrup and egg. 3. Stir in oats, spices, chia seeds and pecans. 4. Drop the cookies in 1 tablespoon balls on the baking sheet about 1 inch apart and press flat with the palm of your hand; top with additional pecans if desired. 5. Bake at 350 for 17-19 minutes until the bottoms of the cookies have browned. Allow the cookies to cool.
