Healthy Butternut Squash Soup

Pureed butternut squash soup with carrots, cinnamon, turmeric and paprika.

    In a large pot, heat olive oil over medium heat and saute squash, carrots, onions and garlic for 5 minutes. 2. Add stock and spices to the pot, stir together, cover and bring to a boil, then reduce heat to medium and cook for 30 minutes, stirring occasionally. 3. Puree with an immersion blender, or allow the soup to cool and blend in a blender until smooth. 4. Serve and enjoy.
