Vegan Meatballs

Black bean and oat meatballs baked and served in a spiced curry tomato gravy.

    Prepare mashed potatoes, pasta, or rice for serving. 2. Pulse all meatball ingredients except oil in a food processor until the mixture sticks together in a thick paste. 3. Roll the mixture into about 15 balls using 1 tbsp each. 4. Preheat the oven to 390 degrees F (200 C). 5. Heat 2-3 tbsp oil in a skillet and fry the balls 6-8 minutes over medium heat, then transfer to a baking sheet and bake about 20 minutes. 6. For the gravy, whisk the tomato paste with the plant-based cream in a pan, slowly add the vegetable broth, bring to a boil, add the remaining gravy ingredients except cornstarch and parsley, and simmer 10-12 minutes. 7. Mix the cornstarch with a little water and stir into the gravy; simmer 2-3 more minutes. 8. Pour the gravy over the meatballs and serve with mashed potatoes, pasta, or rice.
