Vegetable Stir-Fry Noodles

    Cook the noodles in salted water until al dente. 2. Saute the ginger and garlic in oil about 2 minutes, then add the mushrooms, carrot, red pepper, zucchini, and spices and saute about 5 minutes until softened. 3. Whisk all sauce ingredients together. 4. Pour the sauce into the pan and simmer about 1 minute. 5. Add the drained noodles, toss, and cook 1-2 more minutes, adjusting seasonings. 6. Garnish with green onions and sesame seeds.
