Vegan Chickpea "Tuna" Salad
Mashed chickpea salad with celery, pickles, capers, and nori for a tuna-style sandwich filling.

01Roughly chop the red onion, celery, and dill pickles and transfer to a food processor with all remaining ingredients. 2. Pulse 8-12 times until well incorporated but still textured; alternatively mash the chickpeas with a fork and stir in the finely diced veggies and remaining ingredients. 3. Taste and adjust the mayo, citrus, mustard, dill, salt, and pepper. 4. Serve on bread.
