Chocolate Peanut Butter Overnight Oats (Breakfast)
Overnight oats with mashed banana and chia topped with a peanut butter chocolate ganache.

01Mash the banana in a glass jar, add the chia seeds, oats, and plant-based milk, and stir well; refrigerate. 2. Melt the peanut butter, coconut milk, and dairy-free chocolate in a double boiler or microwave for 30 seconds, then stir in the vanilla and salt. 3. Pour the ganache over the chia oat mixture and refrigerate overnight or at least 2 hours. 4. Optionally top with peanuts and enjoy.
