Broccoli and “Cheddar” Soup

A creamy vegan broccoli cheddar-style soup made with cashews, plant milk, broccoli, carrots, and nutritional yeast for a rich, comforting dinner.

    In a large pot over medium heat, heat the olive oil. 2. Add the onion and cook until soft. Add garlic and cook for an additional minute. 3. Mix in the flour and cook for 30 seconds. 4. Add in the broth, milk, broccoli, and carrots. Bring to a gentle simmer. 5. Blend the pre-soaked cashews and a scoop of the broth until smooth and add back into the pot. 6. Mix in vegan cheddar, nutritional yeast, paprika, and turmeric. 7. Simmer for about 15 minutes until the soup thickens and the broccoli is tender. 8. Optionally, mash some of the broccoli for added texture. 9. Season with salt and pepper and serve.
