    In a jar or container, combine the rolled oats, almond milk, protein powder, pumpkin purée, chia seeds, flaxseeds, cinnamon, nutmeg, and ginger. Stir until smooth and well mixed. Add maple syrup if desired. Cover and refrigerate overnight. In the morning, stir again and top with chopped pecans, coconut yogurt, or extra cinnamon if desired. Enjoy cold or warmed briefly.
