Breakfast Cauliflower Fried Rice

Cauliflower fried rice with bacon, eggs, carrots and coconut aminos.

    Heat a large pan and place bacon directly in the pan. 2. Cook bacon for 4 minutes on each side until crispy and browned on the edges. 3. Remove bacon and set aside on a paper towel lined plate, keeping the bacon fat in the pan; add onions, garlic and carrots and saute for 4 minutes until the vegetables start to soften. 4. Push vegetables to the side and scramble eggs on one side of the pan for about 3 minutes until cooked. 5. Stir in cauliflower rice, spices and coconut aminos with the egg and veggie mixture. 6. Cook over medium heat for 2 minutes; while the mixture cooks, chop the bacon. 7. Stir in chopped bacon, garnish with green onion and enjoy.
