Healthy Blueberry Muffins

Whole wheat blueberry muffins sweetened with honey and applesauce.

    Preheat the oven to 350 degrees F and prepare a lined muffin tin. 2. In a large bowl whisk together olive oil, egg, vanilla extract, honey, milk and applesauce. 3. Stir dry ingredients (flour, spices, baking powder and baking soda) into wet ingredients until just combined; do not over-mix. Let the batter sit for one minute. 4. Gently fold in blueberries with a spatula. 5. Pour batter into the lined muffin tin in 0.25 cup increments. 6. Bake at 350 for 20-25 minutes, or until the tops are golden and a toothpick comes out clean when inserted in the center. 7. Allow muffins to cool for at least 10 minutes, then remove from the pan.
