Healthy Breakfast Casserole

    Preheat the oven to 400 degrees F. 2. Heat olive oil in a pan and saute the onions and garlic for 5 minutes. 3. Add the peppers and mushrooms and cook another 5 minutes. 4. Stir in the chopped spinach until wilted, about 2 minutes. 5. Whisk together the eggs and dried spices. 6. Mix the egg mixture, cooked veggies, and cheddar cheese in a large bowl. 7. Pour into a greased 9x13 baking dish. 8. Bake at 400 degrees F for 25-30 minutes until the eggs are completely set in the center.
