    Preheat the oven to 350 degrees F and prepare a lined muffin tin. 2. In a large bowl, mix together the olive oil, egg, vanilla, honey, milk, and zucchini. 3. Stir the dry ingredients into the wet ingredients. 4. Fold in the mini chocolate chips if using. 5. Pour the batter into the lined tin in quarter-cup increments. 6. Bake at 350 degrees F for 20-25 minutes until golden and a toothpick comes out clean. 7. Cool for at least 10 minutes before removing from the pan.
