Strawberry Protein Muffins

Oat flour muffins with vanilla whey protein and fresh diced strawberries.

    Preheat the oven to 350 degrees F and line a 12-count muffin tin with liners. 2. Dice the strawberries into quarter-inch pieces and pat dry on a paper towel. 3. Whisk together the yogurt, honey, eggs, and oil until smooth. 4. In a smaller bowl, whisk the oat flour, protein powder, baking powder, baking soda, and salt. 5. Stir the dry ingredients into the wet until there are no lumps. 6. Fold in the diced strawberries. 7. Divide the batter between the muffin wells. 8. Bake for 16-20 minutes until golden and a toothpick comes out clean. 9. Cool for about 10 minutes before enjoying.
