Apple Protein Muffin
Oat flour apple muffins with vanilla whey protein and warm spices.

01Preheat the oven to 350 degrees F and line a 12-count muffin tin with liners. 2. Peel and dice the apple into quarter-inch pieces. 3. Whisk together the yogurt, honey, eggs, and oil until smooth. 4. In a smaller bowl, whisk the oat flour, protein powder, baking powder, baking soda, cinnamon, salt, ginger, and nutmeg. 5. Stir the dry ingredients into the wet until there are no lumps. 6. Fold in the diced apples. 7. Divide the batter between the muffin wells. 8. Bake for 16-20 minutes until golden and a toothpick comes out clean. 9. Cool for about 10 minutes before enjoying.
