Green Muffins

Blender spinach muffins made with oat flour and applesauce.

    Preheat the oven to 350 degrees F and line a 12-count muffin tin with paper liners. 2. Add the spinach to the blender first, then all ingredients except the baking powder on top. 3. Blend on high for 30-45 seconds until the batter is green with no pieces of spinach. 4. Add the baking powder and blend another 5 seconds to incorporate. 5. Divide the batter between the muffin wells and bake for 15-18 minutes until fully risen and no longer gooey in the center. 6. Cool fully before removing from the liners.
