Healthy Unstuffed Peppers
Deconstructed stuffed peppers with ground turkey, tomato sauce, and herbed cauliflower rice.

01Heat olive oil in a pan and saute the ground turkey for 10-15 minutes until browned; chop the veggies while it cooks. 2. Add the spices, chopped peppers, and tomato sauce and saute on low heat for 5-10 minutes, stirring occasionally. 3. In a separate pan, heat olive oil for the cauliflower rice. 4. Add the cauliflower rice and herbs and saute for 2-3 minutes. 5. Assemble bowls with cauliflower rice and the turkey and veggie mixture.
