Mexican Chicken Tortilla Soup Recipe
Shredded chicken tortilla soup with jalapeno, black beans, corn and cumin.

01In a soup pot, heat olive oil and saute celery, onion, garlic and jalapeno for about 5 minutes. 2. Add spices, chicken breasts, tomatoes and broth, stir to combine and bring to a boil, then reduce to a simmer for 30-40 minutes. 3. Remove the cooked chicken breasts and shred on a cutting board with forks or in a mixer. 4. Place the chicken back in the pot, stir to combine and stir in black beans and corn. 5. Garnish with chips, avocado, cheese or your favorite toppings.
