Stuffed Pepper Soup
Ground beef and bell pepper soup with rice in a seasoned tomato broth.

01In a large pot, heat olive oil over medium heat and cook the ground beef for 10 minutes until browned. 2. Add the onion and garlic and saute for 2 minutes. 3. Add bell peppers, tomatoes, tomato sauce, water, broth, dried spices and rice and stir together. 4. Cover the pot, turn the heat to high and bring to a boil, stirring every few minutes to prevent the rice from sticking. 5. Remove the cover, reduce heat to medium and cook uncovered for 2 minutes. 6. Remove from heat and let sit uncovered for 10 minutes so the rice finishes cooking. 7. Remove the bay leaf and serve with Parmesan cheese and fresh parsley.
