Best Italian Wedding Soup
Italian wedding soup with baked turkey meatballs, orzo, and spinach.

01Preheat the oven to 450 degrees F and line a baking sheet with parchment. 2. Mix all meatball ingredients in a bowl until combined. 3. Drop half-inch round meatballs onto the baking sheet. 4. Bake the meatballs 10 minutes or until golden brown. 5. Meanwhile, heat the olive oil in a large pot over medium heat and saute the carrots, celery, onions, and garlic 5 minutes until the onions start to soften. 6. Add the chicken broth, cooked meatballs, and dried spices, holding back the spinach and pasta; bring to a boil, then simmer 30 minutes. 7. About 10 minutes before serving, cook the orzo separately per package directions. 8. Stir the chopped spinach and cooked pasta into the soup and serve.
