Chicken Spinach Tortellini Soup
Creamy chicken soup with cheese tortellini, spinach, and vegetables.

01Heat the butter or olive oil in a large soup pot over medium heat; saute the onion, carrots, and celery 5-7 minutes until they start to soften, then add the garlic for 1 minute. 2. Whisk in the flour and cook 1 minute, then whisk in 2 cups of chicken broth and cook 2-3 minutes over low heat until thickened. 3. Add the remaining broth, chicken breasts, sage, thyme, salt, and pepper and stir well. 4. Bring to a boil, then reduce the heat and simmer 15 minutes; remove the chicken and shred with two forks. 5. Return the shredded chicken, add the tortellini, and gently boil 8-10 minutes per package directions. 6. Reduce the heat, add the spinach and milk, stir, and serve warm.
