Kielbasa Soup with Beans
Browned kielbasa soup with fennel, cannellini beans, spinach, and ditalini pasta.

01In a large soup pot, heat the olive oil. 2. Brown the kielbasa 5-7 minutes, stirring occasionally. 3. Add the garlic, fennel, onion, carrots, celery, thyme, and pepper; stir and saute over medium heat 5 minutes until the onions start to soften. 4. Add the cannellini beans and broth; stir and simmer over medium heat 10 minutes. 5. While the soup simmers, cook the pasta in a separate pot per package directions. 6. Add the chopped spinach, stir, and cook until just wilted, about 2 minutes. 7. Serve the soup over the pasta in bowls.
