Healthy Cauliflower Soup
Blended cauliflower soup with carrots, celery, milk, and optional cheddar.

01In a large pot, heat olive oil while chopping the veggies. 2. Saute the onions, carrots, and celery until the onions are translucent, about 10 minutes. 3. Add all remaining ingredients except the milk and cheese. 4. Bring the soup to a boil and cook 30 minutes, or until the cauliflower is fork tender. 5. Stir in the milk. 6. Blend with an immersion blender or regular blender until smooth. 7. Stir in the cheese and serve with your favorite toppings.
