Vegan Pumpkin Soup

    Heat oil in a large pot and saute the onion, garlic, potatoes, and carrots over medium heat about 3 minutes. 2. Add the pumpkin, all spices, and vegetable broth; stir and bring to a boil, covered. 3. Reduce the heat to medium and cook about 12 minutes until the veggies are tender. 4. Remove from the heat and blend the soup with an immersion blender until completely smooth. 5. Pour in the coconut milk, stir, and adjust seasonings. 6. Serve drizzled with more coconut milk and garnished with pumpkin seeds.
