Oven Roasted Vegetable Fajitas
Fajitas filled with roasted seasoned cauliflower, peppers, onion, and black beans.

01Preheat the oven to 400 degrees F (200 C). 2. Chop the cauliflower into small florets, slice the peppers and onion, and spread the vegetables on a lined baking sheet. 3. Drizzle with oil, add all fajita spices, toss, and roast 20-25 minutes until browned, tossing halfway; warm the tortillas wrapped in foil in the oven for the last 10 minutes. 4. Heat the beans in a pan with the balsamic vinegar, salt, and onion powder. 5. To assemble, top the tortillas with the roasted veggies, black beans, guacamole, and optional vegan cheese sauce; garnish with fresh greens and hot sauce.
