Vegan Calzone
Folded pizza pockets stuffed with sauteed mushrooms, peppers, tomato sauce, and vegan cheese.

01Prepare the pizza dough of choice. 2. Heat oil in a skillet over medium heat and fry the onion 3-4 minutes, then add the garlic, mushrooms, and peppers and fry 6-10 minutes until the liquid evaporates. 3. Season with onion powder, oregano, salt, and pepper and set aside. 4. Preheat the oven to 480 degrees F (250 C), line a baking sheet, and divide the dough into 4 pieces. 5. Roll out each piece into a 6-7 inch circle about a quarter inch thick. 6. Spoon tomato sauce on one half, add the veggie mixture and vegan cheese, leaving space at the edge. 7. Fold the other half over and pinch the edges to seal. 8. Transfer to the baking sheet and optionally brush the tops. 9. Bake 14-18 minutes and serve with the remaining pizza sauce.
