Vegan Risotto With Broccoli
Creamy arborio rice risotto with broccoli florets, white wine, and vegan cheese sauce.

01Bring 3 cups of vegetable broth to a low simmer in a saucepan and keep warm. 2. Heat oil or vegan butter in a skillet, saute the onion about 4 minutes, then stir in the garlic and arborio rice and saute 1 more minute until the rice is opaque and toasted. 3. Pour in the wine to deglaze, stirring frequently until absorbed. 4. Add broth half a cup at a time, letting it absorb while stirring frequently. 5. After about 10 minutes, add salt, pepper, lemon juice, broccoli florets, and more broth; cover and simmer about 10 minutes, adding broth as needed until the rice is cooked. 6. Stir in the vegan cheese sauce. 7. Adjust seasonings, garnish with fresh herbs, and serve immediately.
