Djuvec (Vegetable Rice)

Balkan-style one-pot vegetable rice with Ajvar, crushed tomatoes, and peas.

    Heat olive oil in a large pot, add the onion and pepper, and saute 3-4 minutes. 2. Add garlic, Ajvar, all spices, and rice and fry 1-2 more minutes. 3. Add the crushed tomatoes and vegetable broth, stir well, and bring to a boil. 4. Simmer covered on low heat for 12-15 minutes, stirring occasionally. 5. Add the frozen peas and simmer 5-6 more minutes, adding more broth if needed. 6. Season with salt, pepper, and spices to taste, garnish with fresh parsley, and add a little lemon juice if desired.
