Baked Gnocchi

Gnocchi baked with broccoli in a creamy blended tomato-vegetable sauce topped with vegan cheese.

    Divide the broccoli into bite-sized florets, boil in salted water for 3-4 minutes, then drain. 2. Meanwhile, heat the olive oil in a saucepan over medium heat and saute the diced peppers, onion, and garlic for several minutes. 3. Deglaze with the vegetable broth, add the chopped tomatoes, and simmer about 15 minutes. 4. Preheat the oven to 360 degrees F (180 C). 5. Finely blend the vegetable mixture with an immersion blender and stir in the dairy-free cream; season with salt and pepper. 6. Place the gnocchi in a large baking dish and mix with the broccoli florets. 7. Pour the sauce over the gnocchi and broccoli, bake 10 minutes, add vegan cheese, and bake an additional 15-20 minutes. 8. Garnish with fresh herbs.
