Baked Vegan Spring Rolls (GF)
Oven-baked spring rolls filled with mushrooms, cabbage, zucchini, and red pepper.

01Heat about 1 tbsp of oil in a skillet and add the diced onion, mushrooms, zucchini, and red pepper, then add the cabbage and saute for 4-5 minutes. 2. Add the garlic, spices, tomato paste, and tamari, cook 1-2 minutes, then let the mixture cool. 3. Drain or squeeze excess liquid from the veggie mixture so the rolls crisp up. 4. Prepare the spring roll wrappers. 5. Preheat the oven to 390 degrees F (200 C) and line a baking sheet with parchment paper. 6. Place about 2 tablespoons of filling on the lower part of each wrapper, fold in the sides, and roll up. 7. Transfer the rolls to the baking sheet, brush with oil, and bake about 15 minutes, then flip, brush again, and bake until crispy and golden brown, 20-35 minutes total. 8. Serve with sweet chili sauce.
