German Potato Dumplings
Traditional German potato dumplings made from mashed potatoes and potato starch, gently poached.

01Cook the potatoes with the peel in boiling water until fork-tender, then drain. 2. Cool, peel, and mash the potatoes. 3. Add the potato starch, salt, and nutmeg and knead into a smooth dough; bring a large pot of salted water to a simmer. 4. With wet hands, shape the dough into 6-8 balls, optionally stuffing some. 5. Reduce the heat so the water is hot but not simmering and cook the dumplings about 15 minutes until they rise to the surface. 6. Remove with a slotted spoon and serve.
