Lyonnaise Potatoes
Pan-fried potato rounds with caramelized onions and warm spices.

01Slice the onion into thin rounds and fry in 1 tablespoon of oil over medium heat until caramelized, about 15 minutes, adding spoonfuls of water as needed; remove from the skillet. 2. Slice the potatoes 1/4-inch thick, parboil in salted water 4-5 minutes, then drain and dry. 3. Fry the potatoes in 1 tablespoon of oil in the same skillet 10-15 minutes until crisp and golden brown. 4. Add the caramelized onions and spices and cook a few more minutes. 5. Garnish with fresh parsley and serve.
