Thai Coconut Curry Soup
Thai-style coconut curry noodle soup with mushrooms, red pepper, and rice noodles.

01Saute the onion in oil 3-4 minutes, then add the ginger and garlic for one minute. 2. Add the curry paste, all spices, broth, coconut milk, soy sauce, and maple syrup; stir and bring to a boil. 3. Add the rice noodles and simmer 4-6 minutes until tender, adding more broth if too thick. 4. Adjust seasonings to taste. 5. Saute the mushrooms and red pepper separately in a little oil with salt and pepper 4-5 minutes. 6. Serve the soup topped with the fried vegetables, cilantro, sesame seeds, and lime juice.
