Lebanese-style lentils and rice topped with deeply caramelized onions.

01Soak the brown rice 20 minutes, then drain. 2. Boil the rice with 2.5 cups water, bouillon powder, 1 teaspoon salt, pepper, and bay leaves; cover and simmer 20 minutes. 3. Meanwhile soak the lentils in cold water, then drain, and slice the onions. 4. Add the drained lentils and 3 cups water to the rice pot, cover, and simmer 25 minutes. 5. Cook the sliced onions in oil, covered, about 10 minutes, then uncover, add cumin and 1/2 teaspoon salt, and cook 5-10 more minutes until caramelized. 6. When rice and lentils are tender, remove the bay leaves and stir in two-thirds of the onions. 7. Serve topped with the remaining onions, dairy-free yogurt, and fresh herbs.
