Vegan French Onion Soup
Caramelized onion soup thickened with red lentils, topped with toasted bread and melted vegan cheese.

01Cook the onions in vegan butter on low to medium heat until soft and caramelized, about 40 minutes, stirring often; season with salt and pepper partway through. 2. Add the garlic and thyme and saute 1 minute. 3. Stir in the wine and simmer 5-6 minutes until nearly reduced, then add the lentils, broth, and bay leaves. 4. Boil, then simmer about 20 minutes until the lentils are tender. 5. Remove the bay leaves, adjust seasonings, and add the tamari. 6. Broil bread slices until browned and top with vegan cheese. 7. Ladle soup into oven-safe bowls, top with the bread, and broil a few minutes until bubbly.
