Vegan Omelette

    Saute the onion, bell pepper, and mushrooms in a little oil until softened. 2. Grind the red lentils into flour in a spice grinder or blender. 3. Combine all dry ingredients in a bowl. 4. Add the water and whisk, then stir in the cooked veggies and fresh herbs. 5. Let the batter sit 5-10 minutes. 6. Heat oil in a skillet, pour in half the batter, spread evenly, and cook 3-4 minutes; flip and cook the other side. 7. Repeat with the remaining batter and serve.
