Vegetable Kabobs (Tofu Skewers)

Marinated tofu and vegetable skewers grilled or baked and served with peanut sauce.

    Press the tofu about 30 minutes and cut into cubes. 2. Cut the veggies to a similar size. 3. Whisk all marinade ingredients except the water, then mix in the water in portions. 4. Coat the veggies and tofu with the marinade and refrigerate about 60 minutes; soak wooden skewers in water. 5. Drain and reserve the marinade, then thread the veggies and tofu onto skewers. 6. Cook in an oiled grill pan 4-5 minutes per side, brushing with marinade, or bake at 390 degrees F for about 25 minutes, flipping once. 7. Serve with peanut sauce, sesame seeds, and fresh herbs.
