Vegan Summer Rolls

Fresh rice paper rolls filled with noodles, colorful vegetables, avocado, and chickpeas.

    Prepare the noodles per package instructions, then drain and rinse with cool water. 2. Chop, slice, shred, or spiralize the vegetables; optionally crisp the chickpeas in a pan with a little oil and soy sauce. 3. Place a damp kitchen towel on your work surface. 4. Dip one rice paper in water for 2-3 seconds and lay it flat on the towel. 5. Place noodles and veggies about a third of the way up, leaving space at the sides. 6. Fold in both sides, then roll from the bottom up until sealed; repeat with remaining fillings. 7. Serve with peanut sauce or hoisin sauce.
