Vegan Grilled Cheese Sandwich
Grilled sandwich layered with vegan cheese sauce, sauteed spinach and onion, and tender carrot strips.

01Slice the carrot lengthwise into thin strips and cook in an oiled skillet with salt and a few tablespoons of broth, covered, until tender, about 12-15 minutes, flipping halfway. 2. Meanwhile saute the diced onion in oil for 4-5 minutes, then add the spices, soy sauce, balsamic vinegar, and spinach; turn off the heat after a minute. 3. Drizzle the bread slices with oil, sprinkle with garlic powder, and toast briefly. 4. Layer two slices with vegan cheese sauce, the spinach-onion mixture, carrot slices, and more cheese sauce, then top with the remaining bread. 5. Cook in a skillet 2-3 minutes per side until golden brown.
