Quinoa Salad
Quinoa salad with chopped cucumber, tomatoes, zucchini, and chickpeas in a lemon vinaigrette.

01Add rinsed quinoa, water, and bouillon powder to a saucepan; bring to a boil, then cover and simmer on low about 15 minutes until the water is absorbed, then cool. 2. Chop all the vegetables into similar-sized pieces. 3. Combine the cooled quinoa, vegetables, and chickpeas in a bowl. 4. Drizzle with lemon vinaigrette, stir, and serve.
