Creamy Butter Beans
Butter beans simmered in a creamy coconut milk sauce with harissa, sun-dried tomatoes, and garlic.

01Finely dice the onion and garlic and chop the sun-dried tomatoes. 2. Heat the oil in a large skillet over medium heat; once hot, saute the onion for 3-4 minutes until softened. 3. Add the garlic and cook for an additional minute until fragrant. 4. Stir in the tomato paste, harissa, and seasonings and let simmer for a minute. 5. Stir in the coconut milk, vegetable broth, and chopped sun-dried tomatoes; simmer for 5 minutes, stirring occasionally. 6. Add the beans and simmer until the sauce thickens to your liking, then taste and adjust seasonings.
