Zucchini Stir-Fry

Zucchini, bell pepper, and chickpea stir-fry coated in a sweet-savory soy-based sauce, served over rice.

    Chop the onion and zucchini in half and slice into 1/4-inch half-moons; dice the bell pepper and mince or grate the garlic and ginger. 2. Combine the sauce ingredients in a jar or small bowl and shake or whisk. 3. Preheat the oil in a large skillet or wok over medium-high heat. 4. Once hot, add the vegetables and stir-fry for 6-8 minutes until tender-crisp. 5. Add the garlic, ginger, chickpeas, and seasonings, and stir-fry for 2-3 minutes. 6. Stir in the sauce and simmer until thickened; garnish with sesame seeds and serve with rice.
