Creamy Onion Pasta
Pasta tossed with golden caramelized onions, cherry tomatoes, dairy-free milk, and vegan parmesan.

01Peel and thinly slice the onions while heating the olive oil in a large skillet over medium heat. 2. Saute the onions with smoked paprika, onion powder, garlic powder, salt, and cumin for about 5 minutes until they begin to soften. 3. Add the minced garlic with 1/2 cup water and cook 25-30 minutes, stirring occasionally, until the onions are golden, adding splashes of water as needed to prevent burning. 4. Meanwhile, cook the pasta in salted water until al dente; reserve 1 cup pasta water and drain. 5. Add the tomatoes and cook a few minutes, then add the tomato paste and chili oil. 6. Stir in the dairy-free milk and parmesan and simmer until the sauce thickens, adding reserved pasta water if too thick. 7. Lightly mash a few tomatoes, add the drained pasta, and toss until evenly coated; taste and adjust seasonings. 8. Serve garnished with chopped parsley, a drizzle of chili oil, and extra parmesan.
