Strawberry Compote/Sauce
Quick stovetop strawberry compote thickened with cornstarch and brightened with lemon juice.

01Wash, hull, and chop the strawberries. 2. Add all ingredients to a medium saucepan and stir until the cornstarch dissolves and no lumps remain. 3. Bring to a boil and simmer over low to medium heat for about 6-8 minutes, stirring occasionally; taste and add more sweetener or lemon juice if needed. 4. Let the compote cool completely and transfer to clean glass jars; blend with an immersion blender for a smooth sauce.
