Healthy Veggie Pasta Sauce
Pasta tossed in a creamy sauce of oven-roasted tomatoes, bell pepper, and zucchini.

01Preheat the oven to 390 degrees F and grease a medium baking dish with a little oil. 2. Add the tomatoes, bell pepper, zucchini, onion, garlic, Italian spice blend, salt, and black pepper, and stir to combine. 3. Add the vegan cream cheese and pour in the veggie broth. 4. Bake for 20-22 minutes, or until the cream cheese starts to turn golden. 5. Meanwhile, cook the pasta according to package directions, then drain, keeping a small amount of pasta water. 6. Remove the baking dish from the oven and blend the veggies using an immersion blender or regular blender. 7. Add the cooked pasta to the veggie sauce, stir to combine, serve in bowls, and garnish with chopped basil.
