Chocolate Chip Sweet Potato Muffins (Breakfast or Dessert)

    Peel and chop one medium sweet potato, boil for about 10 minutes until fork tender, drain, and mash. 2. Preheat oven to 360 degrees F (180 degrees C) and line a muffin tin with liners or grease it. 3. Mix all dry ingredients except the chocolate chips in a bowl or food processor. 4. Add all wet ingredients and mix until just combined. 5. Stir in the chocolate chips with a spoon. 6. Pour the batter into the muffin mold and add more chocolate chips on top. 7. Bake for about 25 minutes, until a toothpick comes out clean. 8. Let the muffins cool before serving.
