Blueberry Banana Bread
Oat and almond flour banana bread studded with blueberries and topped with a maqui berry frosting.

01Add all dry ingredients to a bowl and stir until there are no clumps; preheat oven to 360 degrees F (180 degrees C). 2. Process all wet ingredients except the blueberries in a food processor or blender, pour into the dry ingredients, stir with a whisk, then fold in the blueberries. 3. Line a loaf pan with parchment paper and spoon the mixture into the pan. 4. Bake for about 40 minutes, until a toothpick inserted into the center comes out almost clean; let cool completely. 5. For the frosting, grind the Erythritol until fine, then combine with the plant-based milk, lime or lemon juice, and maqui berry powder, adjusting consistency as needed. 6. Spread the frosting over the bread and refrigerate until the frosting hardens.
