Apple Cinnamon Crepes (Breakfast or Dessert)
Oat and rice flour crepes filled with warm cinnamon apples.

01Whisk all dry ingredients in a bowl. 2. Process all wet ingredients except the oil in a blender. 3. Pour the wet mixture into the dry and whisk to combine, then rest the batter a few minutes. 4. Heat a little oil in a non-stick skillet over medium heat, pour in a quarter cup of batter, and spread with the back of a ladle. 5. Cook 2-4 minutes until a side lifts easily, flip, and cook 1-2 minutes more; thin the batter with milk as it thickens and repeat. 6. For the filling, stir all ingredients in a saucepan, bring to a boil, and simmer a few minutes over low-medium heat. 7. Fill each crepe with a few teaspoons of the apple mixture, roll up, and serve.
