Vegan Chocolate Chip Pancakes (Breakfast)
Fluffy vegan pancakes with oat and coconut flour and dairy-free chocolate chips.

01Make the flax egg by combining the ground flax seeds with 2.5 tablespoons of water; set aside 5 minutes. 2. Whisk the oat flour, coconut flour, baking powder, and salt in a medium bowl. 3. Add the flax egg, maple syrup, and plant-based milk and stir until just combined, thinning with more milk if needed. 4. Stir in the chocolate chips. 5. Heat a little oil in a skillet and cook scoops of batter on low to medium heat until golden brown on both sides. 6. Serve with maple syrup, fruit, or sauce of choice.
