Vegan & Gluten-Free Carrot Cake (Dessert)
A vegan gluten-free carrot cake made with rice flour, ground almonds, and chia eggs, topped with icing.

01Whisk the ground chia and water in a small bowl and set aside 5 minutes to gel. 2. Finely shred the carrots, grease or line a loaf or 8-inch round pan, and preheat the oven to 375 degrees F (190 degrees C). 3. Whisk all dry ingredients in a large bowl, add the wet ingredients, and stir until combined. 4. Fold in the carrots, pour the batter into the pan, and smooth the top. 5. Bake a loaf 50-60 minutes or a round cake 35-40 minutes until a toothpick comes out clean. 6. Cool fully, whisk the icing ingredients together, spread over the cake, and decorate.
