Di San Xian (Eggplant, Potato & Bell Pepper Stir-Fry)

Toss the eggplant with 2 tbsp cornstarch until lightly coated.

  • 1 whole โ€” medium eggplant, cut into bite-sized chunks • 2 medium potatoes, peeled and cubed • 1 bell pepper, cut into large pieces • 3 garlic cloves, minced • 2 green onions, sliced • 2 tbsp cornstarch • 2 tbsp neutral oil
  • 1 whole โ€” Sauce
  • 2 tbsp โ€” soy sauce • 1 tbsp water • 1 tsp sugar or maple syrup • 1 tsp cornstarch • 1/4 tsp black pepper • 1 tsp sesame oil
